I am in the early stages of developing a 1 credit hour course on using Cactus for Computational Physics. Does anyone have any recommendations of material? Has anyone here taught such a class?

It might be useful to collect such material somewhere, e.g. the ET wiki (docs.einsteintoolkit.org), along with any tutorials and associated support material that has been given. This would avoid people having to recreate such training material each time.

Sorry to not reply sooner. We have used Cactus as part of our Scientific Computing course in the past. Not all the lectures relate, but those given by Peter should be relevant. See https://wiki.cct.lsu.edu/sci-comp-2013/Main_Page.
